AVOCADO TOAST WITH SKINNY FRIED EGG

I have always loved avocado. It’s tasty, versatile and healthy too, what’s not to love?! Then, in the past few years, avocados became really trendy, especially avocado toast. Every restaurants’ breakfast and brunch menu offered different kinds of avocado toast and people were eating it up (literally!).

Again, I wasn’t really that surprised by this super trend since avocados are truly amazing. What surprised me was the outrageous prices that people were paying for these fancy avocado dishes!  Don’t they know how inexpensive it would be to make avocado toast at home?!

Well not only is it fairly cheap to make avocado toast at home but it is also super easy!  This breakfast only takes about 5 minutes and you will have a restaurant quality, picture perfect avocado toast ready to eat without the hefty price tag! So where to begin? With the avocado of course!

SELECTING THE RIGHT AVOCADO AT THE STORE

 Choosing the perfect avocado is key to this whole recipe and it’s not always an easy task. You want to look for an avocado that is slightly soft when given a light squeeze, almost the same consistency of a ripe peach. However, grocery store avocados tend to be rock hard, a sign that they are not yet ripe or completely soft.This means they are no longer good and will be brown mush if you cut into them. So what to do? All you need is a little planning!

BEST WAY TO RIPEN AN AVOCADO

As I stated before, I’m basically an avocado addict so to satisfy this obsession, I will buy about 5-6 avocados at a time, enough for a week. I will even get a few that are really hard because by the end of the week, they will be ripe!There’s the trick- all you have to do is wait. Those solid, baseball texture avocados will get ripe if you just give them a little time! To speed up the process, put an avocado in a paper bag with a banana and roll the top of the bag over to seal it. The ethylene gas emitted from the banana and from the avocado will be trapped in the bag and cause it to ripen faster. You still have to wait a day or two, but it’s faster than waiting a full week to ripen those beautiful little fruits!

HOMEMADE AVOCADO AND EGGS

Assembly is quite self explanatory but just in case you were wondering, spread the avocado mix onto the toast and then just top it with your cooked eggs. And look at that, you will never pay outrageous restaurant prices for avocado toast again! You can make perfect, mouth watering, super trendy avocado toast right from your home.

Imagine all the variations of this recipe you could make too,  avocado, bacon and egg, cheesy avocado and egg, avocado, egg and honey drizzle, the possibilities are endless!!

Ingredients
  • 2 eggs (fried sunny side up)
  • 2 slices of bread (toasted)
  • 1 small avocado
  • 1 teaspoon lime juice
  • sea salt + black pepper
  • parsley (optional for topping)
 
Instructions
  1. Prepare toast and fried eggs to personal preference.
  2. Peel and mash avocado with the lime juice, salt and pepper.
  3. Spread avocado evenly on each slice of toast then top each with a fried eggs and additional seasonings you prefer. Serve immediately.
